A Lunch Idea

When it comes to diets, it can be difficult to find something that is healthy, nutritious, and tasty.  Here's a suggestion that I find to be DELISH!!!

First Take a large bowl and fill it with standard salad ingredients; lettuce, tomato, cucumbers, carrots, etc.

Next cook up a 1/4 lb of lean ground beef, or turkey. 

Add about half of the meat to your ready and waiting salad.

Then a quarter of an avocado.

Top it off with a couple scoops of salsa.

This will have a Mexican feel with the salsa and avocado, it is very tasty and should be filling.  It's easy to prepare and can be made in a Tupperware and taken to go. So bring it to work, the movies, church, wherever.  Grab a fork and dig in.

  2. Yum, I needed a new salad idea, thanks. I had grilled chicken salad all week. By the way, I love baby arugula in my salads, they have so much that one can even leave the dressing out. Cheers.

  3. Ways to cook up the meet while minimizing calories:

    * If you do it in oil, use only one table spoon of virgin olive oil. Oil has a lot of calories in it.

    * Even better, use a spray like PAM.

    * Best of all, use chicken broth instead. You can make it beforehand and freeze ice cubes of it, then use a cube or two instead of oil.
